Simple is as simple does

I have been trying to use different recipes for tea lately, fancying something different from our day to day meals, which seem to be set on a routine.  My go to simple dish which is quick and easy to make is:

Chicken and Chorizo fried rice.
(for two people)

1 chicken breast
1/3 of a chorizo ring
1/2 teaspoon of garlic (lazy garlic, or fresh or dried)
1/2 teaspoon of ginger (lazy ginger, or fresh or dried)
(if using dried you might need more to taste)
soy sauce (as needed)
mushrooms (as many as you want)
11/2 cups of rice.

First of all I put my rice in my microwave rice cooker.  This is generally on high for 12 minutes.  While this is cooking I dice up the ingredients.  I cook the chicken first in some olive oil with the ginger and garlic when it's nearly done I add the mushrooms and the chorizo. (Mr Bus cooks this with one small red onion, which you can cook before the chicken and then add everything to).

By this time the rice should have cooked, lower the heat and add the rice stirring thoroughly. Add the soy sauce, as much or as little as you want and then whack the heat up high for a few minutes.  Wham bam thank you mam.....you have chicken and chorizo fried rice.  Yummy warming and comforting.

VW Bus Birthday Cake

It’s that time of year again the fantastic Mr Bus’ birthday.   Now last year I decided to design and make him a digger cake, this year of course I had to equal that effort or go one better.   I had a few ideas in the pipeline and decided to ask the Birthday boy what he would prefer.   We went with a VW Bus cake. Like to Graze?

Well, I have started to try and be healthier, mainly with making my portions smaller and doing some exercise. I now try and go for a run once a week (to start with) and my sister and I now attend Aquafit every Thursday. The other evening when I went to one of my fantastic friend’s house I noticed these delicious looking healthy snacks on her table, brimming with flavour and healthy goodness. I just had to ask her about them. They come from a company called Graze, which is online. You can order boxes from them (a snack box or a nutrition box) which will be delivered straight to you either weekly or every other week, for a small cost (cheaper than buying it all from a supermarket for sure). The box is small enough to fit through your letter box as well, so you don’t have to worry if you’re in or not. Weston Hall Afternoon Tea

Well if you haven’t guessed I do enjoy an afternoon tea even though I don’t have a sweet tooth.   For my last birthday my lovely friend Fordy got me two vouchers for afternoon tea at Weston Hall , Stafford.   Having a browse on line beforehand this looked like a marvellous setting. We arrived at this lovely building which was very picturesque the only down side was that it was quite close to a main road and this spoiled the view a bit but the noise levels weren’t too bad.   We headed into the Cellar restaurant where our afternoon tea was booked and showed into the lounge area where we would be having it.   Mr Bus and I chose some lovely sofas to sit on next to the fire, although it was the end of May we went the weather was still cold and wet so this was welcome.
